CHAPTER I: CARBOHYDRATES

Introduction

hese are organic compounds consisting essentially of the elements carbon, hydrogen and oxygen in the ratio 1:2:1. They have a general formula Cox (H2O) y, where x and y a variable numbers.

Carbohydrates include sugars (monosaccharide and disaccharides) and non sugars (polysaccharides). Carbohydrates are found in all plant and animals and have diverse functions. Sugar and starch serve as potential energy sources for important metabolic processes others such as cellulose, chitin etc...Serve as structural component of cells. Carbohydrates are classified into monosaccharide, disaccharides, and polysaccharides.
